Kefir Chocolate Mousse
- 400g The Culture Co. Natural Kefir
- 250g 70% dark choc, finely chopped
- 3 tbsp caster sugar
- 1 tsp vanilla bean paste
- 375ml thickened cream
Combine 200g kefir, chocolate, sugar and vanilla in a heatproof glass bowl over a small saucepan of simmering water. Stir until chocolate has dissolved completely then allow to cool slightly (about 20 mins).
Combine cream and remaining 200g kefir and whip to soft peaks.
Fold cooled chocolate mixture gently through whipped kefir cream then divide between 4 glasses and refrigerate 3-4 hours before serving.
